I modeled one in Maya 2008 but had a hard time making the carved top. I pretty much learned the program by myself a few months ago, so it's not very good. I link a few photos in a bit

I modeled a complete Stratocaster in ProEngineer as something to do during lunch at work years ago. I probably spent about two weeks worth of lunch breaks to complete it, and then I decided the next project would be a Les Paul. I had finished the body and hardware, but by the time I got to the neck it was beginning to feel too much like work and so I got bored and never finished it. The models are reasonably accurate, although not to the level that you would want to use them as plans to build a guitar. Here are some images files of the models. Let me know if you're interested in a copy of the actual CAD models.
