Hello, I've had a 2007 Les Paul Classic 1960 for about a year now, it has a pretty plain top with a very subtle flame, and ever since seeing the listing up on Reverb, I've known that it has a single piece body. Is this normal on these 1960 Classics? It also has a very weird circular grain pattern on the body that I've never seen before, could some explain why? (pics provided )

Not overly unusual to see a 1 piece on a guitar of this era even further down the 'hierarchy'. Its only been the last few years where the 1 piece'ers have become more rare.

That wood cut is called 'flatsawn'.......also not overly rare in general type, but every tree being different the precise pattern will be unique to your slab.

The amount of pieces in the body does not change the tone.
If it sounds good then resume rocking :dude:

Clearly a 2 piece top as the center seam on the maple top is visible

Classic used to be 1-piece body until around 2000. Thereafter, 2-piece body.

Tops typically a 2-piece as shown in pic OP posted.
