New Les Paul colors

I have always wanted a real Les Paul since seeing Kiss live as a beginning player many years ago. I just couldn't justify the cost and ended up with lots of pointy guitars from the 80's. Now I am in the position to buy and need advice on which model. Visually the ebony classic checks all the boxes for me but I like the ebony board, mop inlays and locking tuners of the modern. I just don't care for the modern colors. Pretty sure I'll end up with the classic. I guess this is more of a complaint or rant. Why does Gibson not offer all colors and bursts across all models. I would happily buy the more expensive Modern in ebony or wine red. Any feedback on the classic?
